In all the below recipes, it is recommended to use Organic Jaggery which is generally produced by our farmers in the nearby villages without any chemical processing. Many FMCG companies are also selling Organic Jaggery Powder in convenient packaging on a retail basis.

 

Jaggery Tea or Gud Ki Chai

There is no special technique to make Jaggery Tea or Gud Ki Chai for winter. Instead of adding normal white sugar to the tea, Jaggery is added. Some spice or tea masala can also be added as per taste and preference. Before adding it to the tea, it will be best to convert Jaggery into powder format by crushing it.

Organic Jaggery is the best Jaggery for making this type of tea. Organic Jaggery means that it has not gone through any chemical processes to make it more sweet. The identification of Organic Jaggery is that generally it is of very dark brown colour. Organic Jaggery can be procured from the farmers in the nearby villages.

Karupatti Paal or Palm Jaggery milk

It is preparation of hot milk for drinking with Palm Jaggery. Dry ginger powder should also be added to give it a healthy touch and taste. It is a drink for winter as Palm Jaggery is rich in iron and the hemoglobin increases in the body by its regular consumption.

Palm Jaggery and ginger powder should be added after boiling milk for at least two minutes separately. Milk should not be boiled after adding Palm Jaggery and ginger powder to it. It will curdle the milk.

Jaggery Milk Pudding

Jaggery should be crushed into powder format and it should be soaked into little hot water to convert it into syrup format. For this half cup of water or to cover the Jaggery while soaking  is sufficient.

Wash rice and lentils in cold water and toast them 2 or 3 minutes lightly on a non-stick pan by adding 1 or 2 tbsp ghee.

Add milk to this mixture and give it a mix. After that it should be cooked for 3 or 4 whistles in a pressure cooker. Mix the Jaggery well and boil it for 3 to 5 minutes till it gives aromatic odour.

Remove from the heat and add cardamom powder and edible camphor for giving it flavour.

Add the new syrup to the mixture of rice and lentils and give it a mix properly.Make a topping or cashews and raisins before serving it.

Gur Ki Kheer or  Kheer With Jaggery

Jaggery is used instead of normal processed sugar to make this kheer. Use of Organic Jaggery is best for this type of kheer. It is made of rice, jaggery, full cream milk, almonds, cashew nuts, cardamom  and raisins.

After  boiling rice and draining excess water , boiled milk is added to it. Mixture should be stirred for 1 or 2 minutes to prevent milk from catching to the bottom of the vessel.

Jaggery syrup is prepared in some other vessel. After the mixture of milk and boiled rice cools down, Jaggery syrup is added through a sieve and mixed to the kheer. Chopped almonds and cashew nuts and raisins are added afterwards to give a taste.

Meetha Doya or Milk and Jaggery Dessert

Following ingredients are required to make Meetha Doya or Milk and Jaggery Dessert :

  • Jaggery
  • Cashews
  • Raisins
  • Yogurt (Curd) & Milk

Some milk is heated in a pan. Jaggery Syrup is prepared in another pan.Milk should be boiled up to a stage where it becomes thick and creamy. Jaggery syrup is mixed with the milk. Please note that milk should cool down before Jaggery Syrup is added to it. 

Afterwards two spoons of yoghurt are added  and the mixture is refrigerated. This dessert is served chilled.

Gulgule

Prepare a Jaggery syrup with hot water till the Jaggery gets dissolved into it. At the same time , prepare a mixture of atta, ghee, salt and baking powder in another vessel.

Add the Jaggery syrup to the mixture to make it soft and gulgula.

The mixture should be droppable in hot liquid ghee  in consistency to form round gulgula

Add the saunf to the mixture.

Prepare the oil by heating and drop as many lumps of mixture to form gulgule and keep removing and repeating the process. Before removing make sure they are turned and heated in hot ghee  so that they become brownish red.

Gud Aur Atte Ka Halwa

Whole wheat flour atta,Jaggery, water, ghee, cardamom and almonds are needed to prepare this Gud Aur Atte Ka Halwa. It is a staple diet for North Indian people.

To make this healthy and mouth delicious dessert , ghee is heated in the bottom pan.

Atta is added and it is roasted till it becomes golden brown on low flame. During this process, it is stirred continuously.

Jaggery dissolved in water, cardamom powder and saffron is added and it is mixed well.

This mixture is cooked until halwa thickens and atta has cooked.Almond topping  is added and it is served hot.
